The gateway holds every transaction. Compare its record against your restored orders and re-enter the missing ones.
Contact those customers. They paid and their order may no longer exist in your system.
FOR FORM SUBMISSIONS
Notification emails in your inbox are a record. Re-enter them if the storage matters.
FOR CONTENT
Your pre-restore copy contains it. Extract the specific content and re-add it.
FOR USER REGISTRATIONS
Harder. Affected users may need to register again. Contact them.
DOING IT SYSTEMATICALLY
Work through a list rather than discovering gaps over weeks. Write down what was lost before you start.
