We run LiteSpeed, so the LiteSpeed Cache plugin uses server-level caching. That is substantially faster than PHP-based alternatives and it is free.
Use it where your application supports it.

Page caching. Everything else is secondary.
WHAT BREAKS THINGS
Combining and minifying files, which is the most common cause of a site breaking after enabling a caching plugin.
Enable one option at a time and test.
WHAT MUST NEVER BE CACHED
Cart, checkout, account pages, and anything showing one visitor's data.
TWO PLUGINS
Never run two caching plugins simultaneously. They conflict in confusing ways.

Purge the cache. A change that appears not to have saved is usually a stale cache.
